A local favorite breakfast and lunch spot is expanding into Spring Valley. Griddlecakes is moving into the former Wrap House Grill at the Pine Plaza Retail center, taking over 1,330 square feet of space, close to new neighbor Panna Thai Restaurant.
Griddlecakes serves a full lunch menu of sandwiches, burgers, melts, warps and salads, but is best know for their breakfast dishes including stacks of hotcakes, build your own omelets, griddle skillets like the sausage and onions "Hobo" and house specials like the "Lumber Jack" created with two pancakes, three eggs, bacon and home fries.
The locally owned chain already has locations at the Sanson Marketplace in Henderson and in the northwest, inside the former Mollie's Kountry Kafe. They formerly ran The Griddle in Spring Valley, which later morphed into a Stacks & Yolks. A time table for completion for the Griddlecakes expansion has not been announced.
