Healthy Mexican food? Seems like an oxymoron, but chef Mike Minor at Border Grill is out to show us otherwise. He’s hosting a healthy Mexican cooking class at the home built by Mary Sue Milliken and Susan Feniger of Bravo's "Top Chef Masters" and Food Network’s "Too Hot Tamales" at Mandalay Bay.
While the Jan. 21 class is a bit late to keep you on track with your New Year’s resolutions, it does promise demos of recipes with healthy meats, poultry and sustainable seafood loaded up with veggies, herbs, whole grains, beans and homemade tortillas.
