Quite a few switch ups are in the works at Wynn Las Vegas. First off, Tableau has only recently reopened as the Tower Suites Café, but we hear that the company has parted ways with Chef David Spero. Until a replacement is named one of the resort’s executive chefs, David Snyder, will serve up some swanky breakfast, lunch, tea and evening tapas; and notably breakfast or lunch and tea or tapas are now served gratis to guests staying in the exclusive Wynn Tower Suites section of the hotel.
In other news, Chef Jet Tila has ended his consultancy at Encore’s Wazuzu and will focus on his forthcoming LA projects and TV show. Tila's departure leaves his former sous Scott Okazaka and the resort’s chef tournant Adam Arencibia in charge as the resort searches for a permanent replacement.
What’s more, as Okada is set to undergo a major makeover immediately following Super Bowl Weekend they will relocate some of their staff, including Chef Devon Hashimoto, to Wazuzu during the refresh. The idea is to offer a select number of Okada favorites to the devoted while one of the Strip’s best sushi, robatayaki and habachiteria is temporarily shuttered.
Elsewhere at Encore, Switch has similarly been preparing to undergo a chrysalis into a Latin concept under the direction of Michael Morton, though this deal has apparently fallen through. We are hearing that while Switch will still be rebranded they are presently in a holding pattern.
Finally on the their nightclub front, Alex is ready to transform into the uber club Climaxx (yes, with two X’s) under the guidance of Las Vegas Nightlife Group’s Sean Christie; and though happening, this will not open until late 2012 as construction plans are still in the approval stages. —David Morris
