The $495 Rémy Martin Louis XIII Dinner at Comme Ça

COSMOPOLITAN OF LAS VEGAS — If you have an extra $495 laying around, consider spending it on the Rémy Martin Louis XIII dinner at Comme Ça Thursday, March 1, and Friday, March 2. The six-course dining experience features wine and cocktail pairings served in the private dining room with views of the Las Vegas Strip. Chef David Myers and executive chef Brian Howard planned the menu.

It starts with a tasting of Nebraska Waygu beef tartare with black pepper vodka crème fraiche, crispy hollandaise and parilla paired with a glass of Bearboat Pinot Noir. Then big eye tuna garnished with green peppercorn, ibérico chutney and seawater gelee paired with Piper Heidsieck Sparkling Rosé. The third course will feature a traditional French dish of shaved foie Gras topped with black truffle, gingerbread crisp and red wine paired with a glass of Macallan Negroni. Next, a cedar wood smoked wild boar with squab, pig panna cotta and foraged greens for the fourth course paired with the Penicillin, a combination of scotch, fresh lemon ginger and honey with an islay float. Dinner ends with a burnt orange Claflouti made with aerated smoked chocolate, chestnut pastry cream, frozen hazelnut meringue and preserved Meyer lemon ice cream. The dessert will be complemented with warmed Cointreau.

But the final course is the kicker — a glass of Louis XIII de Rémy Martin cognac, originally priced at $235 per glass.

SUMMERLIN — Tomorrow night, seven culinary students at Le Cordon Bleu College of Culinary Arts square off in the 2012 S.Pellegrino Almost Famous Chef Competition. Two future Vegas chefs made the cut — Le Cordon Bleu student Tawatchai Ratthanaluyeroongroj and International Culinary Schools at The Art Institutes student Heather Perry.

Judges for the event include chef Rick Moonen of RM Seafood at Mandalay Bay, chef Carla Pellegrino of Bacio and Bratalian Restaurants and chef Luciano Pellegrini of Valentino Las Vegas at the Venetian along with John Curtas of Eating Las Vegas and Brock Radke of Las Vegas Weekly and Las Vegas Magazine.
