Sin City is home to a lot of restaurants and bars, but there are tons of hidden gems that the majority of Las Vegans aren't unearthing. To help guide us to these potential discoveries, we've enlisted some of our city's food players to share their recommendations for a weekly feature dubbed Dining Confidential. Know a chef who wants to share some top dining spots? The tipline is open.

Geno Bernardo learned at an early age how to become a chef. At 16, he was cooking at Massimo's, an Italian restaurant in his New Jersey neighborhood. Now he has Nove Italiano at the top of the Fantasy Tower at the Palms. Here he shares his favorite places to dine when he's not plying his skills in the kitchen.
Where do you enjoy eating when you're not working?
Raku, Bouchon and I Love Sushi
What dishes are most memorable?
At Raku you have to get the uni and egg, salmon roe dish. The creamy uni and egg with the salt from the salmon roe and the taste of the daikon is like no other. I am good for two orders each time I dine there.
My favorite dish at Bouchon is their rich and creamy foie gras torchon. As the foie gras starts to melt, it spreads easily on their crispy bread and it's heaven! You'll have to get another order even after your meal comes out.
At I Love Sushi, I don't go for the rolls. They have some of the best sashimi in the city. The sushi chef Frankie knows me, so he always pulls out all the good stuff like belly of yellowtail, great Toro and always makes me a killer clam miso.
Why do you enjoy going there?
I go to these restaurants because they know me and always take care of me. They treat me like family. Plus, I enjoy the food and conversations with them about the business. Raku is always doing new things and it's great to see the entire staff when I go in. Bouchon's bartender, Sooner, always knows what I like and really cares about her guests at the bar. Chef Frankie at I Love Sushi is the man! He is always happy to do a shot of sake with me.
I hope everyone can come see me Oct. 13 at Nove Italiano for a new cooking class I'm putting on. This will be a great way to learn the tricks of the kitchen while enjoying some wine and cocktails with me.
