Project Pie, the pizza joint that promises world domination on the scale of Chipotle, is now open in the area dubbed The Underground at the MGM Grand.
James Markham, who also founded the MOD Pizza chain in Seattle and Pieology in Fullerton, Calif., is behind the project.
Guests can choose from 24 toppings for one price or pick one of nine signature pizzas from the menu. The $12 pizzas cook up in less than three minutes in an 800-degree gas-fired oven. The Neapolitan-style pizzeria also has a gluten-free option. Salads, desserts and handmade milkshakes also make the menu.
The location at the MGM Grand takes up 1,800 square feet with seating for about 52. Markham describes Project Pie's design as "vintage industrial."
Project Pie is open daily from 10 a.m. to 2 a.m.
