Bouchon Bakery Edging Closer to the Strip. And Opening Day.

Beneath the Clock Tower, a franchise is brewing. A second outpost of Thomas Keller's Bouchon Bakery has advanced to the plywood stage at the Venetian.

The compact 829-square-foot bakery will be located steps from the Strip and the Venetian's Doge's Palace casino entrance. This is the second resort location for the bakery, the original remains opposite the newly renamed Venetian Theatre, unaffected by the expansion plans.

Sébastien Rouxel, executive pastry chef for the Thomas Keller Restaurant Group, has proved reluctant to share specific details, telling Eater National: "That's the project we're working on right now, and it should open sometime in November." By Thanksgiving is the preferred date and will coincide with a appearance by chef Keller at the launch. In the meantime, for the adventurous wishing to replicate the menu of sweets and savories, the Bouchon Bakery Cookbook from Keller and Rouxel debuted Oct. 23.

Still to come, progress on the second floor of the Tower, where Keller's twist on the gelato store is also under construction.
