Dan Rossi, who served as the chef de cuisine at Renoir and Alex for Alex Stratta, tenured with David Burke and until three weeks ago served as the executive chef at Scott Conant's Scarpetta and D.O.C.G. inside the Cosmopolitan of Las Vegas, has quietly left his post. Though there's no word yet on Rossi's next move, his former number two at D.O.C.G., Todd Sugimoto, has been promoted and will now be helming the kitchens at both restaurants. [EaterWire]
