Tivoli Village lands a new restaurant today when Cantina Laredo debuts its Mexican fare for lunch, dinner and Sunday brunch. The chain worked lickity split to wrap up construction on the 6,231-square-foot space that started about two months ago. Diners can sit inside with room for 300 or on one of two patios.
Executive chef Damon Workman has been a Cantina Laredo fixture for six years with stints at locations in Nebraska, Arkansas, Missouri and Texas.
The Mexico City-inspired menu features dishes such as camaron poblano asada with sautéed shrimp, mushrooms, onions, jack cheese all inside a grilled poblano pepper wrapped in carne asada steak; enchiladas de avocado topped with tomatillo sauce; and braised pork shanks with chipotle-wine sauce. The restaurant is perhaps most known for its guacamole made table side. Desserts include a Mexican brownie, mango tres leches and flan and more.
On the margarita menu, look for the Casa Rita and Cinco Margarita, a blend of five tequilas. More than 60 tequilas find a home behind the bar.
The restaurant plans to serve brunch from 11 a.m. to 3 p.m. on Sundays, and guests land a complimentary bloody Mary or mimosa as well as dishes such as crab cakes Benedict and asada y huevos.
The restaurant also serves up happy hour Mondays through Thursdays from 4 to 7 p.m. and again from 9 to 10 p.m. with different daily drink specials.
