Sin City is home to a lot of restaurants and bars, but there are tons of hidden gems that the majority of Las Vegans aren't unearthing. Todd Sugimoto has recently been installed as the new exec-chef at both Scott Conant's Scarpetta and D.O.C.G. inside the Cosmopolitan. His Vegas pedigree dates back to 1998 when he opened Todd English's Olives and has also stinted at the now defunct Bradley Ogden and a few of Michael Mina's Vegas outposts before assuming the number two position at D.O.C.G. a year ago. Here he shares his favorite places to eat when he's not in the kitchen.
Where do you enjoy eating when you're not working?
Honestly my go to's are based off of my children. Being a chef you are not at home very much so every chance I get I am out with my kids. I have two little girls so three restaurants would be Monta Ramen, Archi's Thai Kitchen and Bachi Burger.
Of those restaurants, what dishes are most memorable?
At Monta I usually order the ramen. It's in a soy-based broth with egg noodles. I add a couple extras like pork, their soft boiled egg and corn. I love everything at Archi's! The pad thais is great love the panang curry and their beff salad. At Bachi Burger – any of their burgers that have an egg on it. Nothing makes a hamburger more delicious then a fried egg on top. They have a couple different ones. The last one I ate was the Ronin Burger.
Of those restaurants, why do you enjoy going there?
Monta reminds me of home, Hawaii. I think Archi's is the best Thai cuisine in Vegas. I know some people say Lotus of Siam is the best, but Archi's is the best for me.
