Pinot Brasserie's Bordeaux Pairing Dinner; More

VENETIAN — Pinot Brasserie has a $75 prix fixe menu with Bordeaux pairings all month. Guests can choose from an endive salad with shaved foie gras terrine with a truffle vinaigrette or a lobster bisque with lobster medaillon and a dollop of caviar paired with L'Esprit de Chevalier, Pessac-Lognan, 2001. Entree choices include Barramundi potato mousseline sauce Americaine, or roasted chicken served with mushroom fricasse and Pinot garlic fries, or a filet mignon with roasted potato, creamy spinach and Bordelaise sauce. The entree will be paired with Chateau des Matards, Cuvee Nathan, Cotes de Blaye, 2008. Finish the meal with choice of dessert between an apple tart with roasted almond and vanilla ice cream or roasted strawberry with vanilla bean, balsamic, black pepper reduction and Humboldt fog goat cheese.
