The first West Coast location of Carlos’n Charlies is set to debut at the Flamingo Las Vegas this April. The Mexican food chain will take up 8,000 square feet next to the Race & Sports Book at the resort. Look for lunch and dinner at the restaurant that will offer seating for 150 and an outdoor terrace overlooking the Flamingo pool and gardens. Oversized umbrellas and cooling misters on the patio will keep the heat off 150 additional guests on the terrace in the summer. The bar area will seat another 40 guests.
Carlos’n Charlie’s opened its first location in Acapulco, Mexico, in 1970, with loud music and a party-like atmosphere. Currently there are 11 Carlos’n Charlie’s locations throughout Mexico. The restaurant concept comes at the hands of Grupo Anderson, the team behind Mexico’s Señor Frog’s, which plans to debut at Treasure Island this spring.
The menu includes typical Americanized Mexican fare such as tacos, burritos, chimichangas, enchiladas and fajitas. The restaurant offers a tableside guacamole cart where guests can create their own mix. Other menu items include American favorites such as chipotle barbecue ribs, burgers and spicy chicken wings.
