Grimaldi’s Pizzeria Opening at the Palazzo

Grimaldi’s Pizzeria is getting set to open its second Strip location, this time at the Shoppes at the Palazzo. The 4,000-square-foot pizzeria plans to open at the beginning of May next to Emeril Lagasse’s Table 10 on the second level of the Shoppes. The resto takes over the space occupied by Woo.

In November, Eater LA reported that the build out is complete and management is waiting on a coal-fired oven. The 25-ton coal-fired oven gets heated by 100 pounds of coal per day to temperatures up to 1,200 degrees. It’s the heat that bakes the pizza’s crispy, smoky crust.

Grimaldi’s started in Brooklyn and now has 27 locations nationwide. The Vegas outposts bring in a chemist to get the water composition just right so the crusts taste the same as they do in the original under the Brooklyn Bridge.

Currently, Grimaldi’s Pizzeria operates one other store on the Vegas Strip in Fashion Show mall and other locations in Summerlin, the Southwest and Henderson.
