Society Cafe’s own chef de cuisine Bryan Forgione at Encore Las Vegas now has his very own Iron Chef title. On Sunday, the chef paired up with his Iron Chef brother Marc Forgione on the Food Network show to defeat Philadelphia chef brothers Lou and Joey Campanaro.
The duo used parmigiano-reggiano as their secret ingredient in the five dishes they had 60 minutes to prepare for judges Cady Huffman, Mario Rizzotti and Anya Fernald. One dish, their veal parmesan, used a recipe created by the Forgione’s grandfather. They even brought the cheese into an ice cream for dessert.
Marc Forgione runs his eponymous restaurant in New York along with his Iron Chef duties. The brothers father Larry Forgione once ran Tableau at Wynn Las Vegas for a year and was the consulting chef for the launch of P.J. Clarke’s at the Forum Shops in Caesars.
