More details emerged today on the new Center Cut Steakhouse set to open in as soon as two weeks at the Flamingo Las Vegas. The quick turnaround comes because parent company Caesars Entertainment is handling the renovations.
First up, the menu includes a 20-ounce rib-eye and a 24-ounce porterhouse that use beef sourced from Aspen Ridge Farms in Colorado. These cows were born and raised in the United States and are 100 percent hormone- and steroid-free. A steakhouse Kobe burger and rack of lamb are also on the menu.
Next up, the bar menu includes a pomegranate lemon martini, a cucumber martini and the Cut Diablo cocktail, made with tequila, orange juice, mint leaf, a splash of soda and garnished with a jalapeño stuffed with orange. And happy hour goes from 4 p.m. to midnight. Pretty cool.
Center Cut takes over the former Burger Joint space next to Tropical Breeze Café with space for up to 172 guests in the bar, lounge, restaurant and private dining room. A black and white décor with pink accents gives it a classic Vegas atmosphere while plasma screens in the restaurant will show photo montages from the 1940s to today that pay homage to the 66 years Flamingo has been at the heart of the Las Vegas Strip.
