Carlos’n Charlie’s opened yesterday at the Flamingo Las Vegas, and Eater Vegas got a look inside the Mexican cantina next to the sports book. Inside, guests can take their time looking at the campy decor that seems to take up every inch of wall and ceiling space. Outside, the patio may become one of the hottest seats in the restaurant. This restaurant plans to be fun, fun, fun with servers freezing when the music stops, dancing faster when it speeds up and forming a mandatory conga line periodically. The guacamole made at a tableside cart is nothing to sneeze at either.
