Center Cut Steakhouse Now Serving up the Beef

Flamingo Las Vegas quickly turned around the former Burger Joint space to turn it into Center Cut Steakhouse, a sleek new restaurant.

In front find a bar where happy hour goes on from 4 p.m. to midnight. The bar menu includes a pomegranate lemon martini, a cucumber martini and the Cut Diablo cocktail made with tequila, orange juice, mint leaf, a splash of soda and garnished with a jalapeño stuffed with orange.

On the menu find a 20-ounce rib-eye and a 24-ounce porterhouse that use beef sourced from Aspen Ridge Farms in Colorado. These cows were born and raised in the United States and are 100 percent hormone- and steroid-free. A steakhouse Kobe burger and rack of lamb are also on the menu.

A black and white décor with pink accents gives it a classic Vegas atmosphere while plasma screens in the restaurant show photo montages of images from the 1940s to today that pay homage to the 66 years Flamingo has been on the Las Vegas Strip.
