Easter Display at L'Atelier; New F&B Honcho at Wynn

MGM GRAND — L’Atelier de Joël Robuchon has a new Easter display created by executive pastry chef Kamel Guechida featuring chocolate bunnies, hens and eggs; sugar picnic baskets with colorful bows, flowers, shells and fish; plus a variety of fondant bird cages filled with sweet surprises. Guechida and his team of 10 spent more than 1,000 hours over six weeks discussing, sketching and testing dozens of ideas before coming up with the final 500 pieces. More than 110 pounds of milk, dark and white chocolate, 2,000 tablespoons of sugar and 50 containers of colored cocoa butter were used to create and decorate the items on display. [EaterWire]

WYNN LAS VEGAS — Pradeep Raman has joined the resort as senior vice president of fine dining, overseeing all aspects of food and beverage operations. Raman brings 15 years of food and beverage experience. Previously, he worked at luxury brands such as Ritz-Carlton in New York City, Istanbul, Half Moon Bay and Kuala Lumpur and The Peninsula in Chicago and Kowloon in Hong Kong. Starkus, the lead bartender at Rick Moonen’s RM Seafood, won top honors last week after winning the local round of the first-ever Campari “Best Aperitivo” Cocktail Competition in conjunction with the U.S. Bartenders’ Guild.
