The 18-Seat Kabuto Serves Up Authentic Japanese

The 18-seat Kabuto is now in its soft opening phase in Chinatown. From reviews on Yelp, this place will be one of the toughest tickets in town once word leaks out. The restaurant features a minimalistic facade, much like the great sushi places in Tokyo that are hidden away and impossible to find.

The restaurant is part of the Mon family of restaurants that includes Monta, Goyemon and Sushi Mon and designed by Martin Koleff, known for his work with authentic Japanese restaurants in Las Vegas.

First impressions dub that food here 100 percent authentic. One Yelper even gave seven types of people who shouldn’t eat here that include those who prefer tiger rolls and spider rolls to nigiri, those who can't name 10 kinds of fish commonly eaten in a sushi restaurant in under a minute, those who like Yum Yum sauce and those who mix wasabi into a full plate of soy sauce.
