Quick update on that Grimaldi’s Pizzeria opening at the Shoppes at the Palazzo. The 4,000-square-foot pizzeria originally planned to open at the beginning of May next to Emeril Lagasse’s Table 10 on the second level of the Shoppes. Now it looks like a late June or early July opening is in the works. The restaurant takes over the space occupied by Woo.
The pizzeria has been waiting on the arrival of its 25-ton coal-fired oven that gets heated by 100 pounds of coal per day to temperatures up to 1,200 degrees. It’s the heat that bakes the pizza’s crispy, smoky crust.
Grimaldi’s started in Brooklyn and now has 27 locations nationwide. The Vegas outposts bring in a chemist to get the water composition just right so the crusts taste the same as they do in the original under the Brooklyn Bridge.
Currently, Grimaldi’s Pizzeria operates one other store on the Vegas Strip in Fashion Show mall and other locations in Boca Park, the Southwest and Henderson. ?
