Sin City is home to a lot of restaurants and bars, but there are tons of hidden gems that the majority of Las Vegans aren't unearthing. To help guide us to these potential discoveries, we've enlisted some of our city's food players to share their recommendations for a weekly feature dubbed Dining Confidential.
Anthony Meidenbauer is one busy guy. As the corporate executive chef and director of culinary operations for Block 16 Hospitality, Meidenbauer opened Holsteins Shakes and Buns at Cosmopolitan of Las Vegas as well as The Barrymore at the Royal Resort and Public House at the Venetian.
Right now, he’s even launching a line of fresh and fresh-frozen 100 percent vegan veggie burger patties that will be sold in specialized grocery stores such as Whole Foods, Gelson’s, Bristol Farms and direct mail. He shares his favorite places to dine in Las Vegas.
Where do you enjoy eating when you’re not working at your own restaurants?
Monta Ramen, Settebello and Lotus of Siam.
What dishes are most memorable?
At Monta, I stick with the shoyu ramen with corn, charsu, butter and green onion. This is all I ever get at Monta and it is the best. Their broth is light years better than any other ramen house in Vegas.
At Settebello, I almost always try the special of the day. The team there always create great specials so seeing what is on the chalk board each time I go in is what makes it fun.
And at Lotus of Siam, you can't go wrong with the garlic prawns. They are amazing. Crispy, spicy and salty all in one.
Why do you enjoy going there?
I enjoy them because they are always consistently great! I know what I am getting into when I go there and they never let you down. The food is always amazing.
