A little more information on Eat, the new breakfast and lunch spot chef Natalie Young plans to open in September at Seventh and Carson streets. The restaurant “will feature fresh beignets, prime rib hash with green chilies and poached eggs and pancakes with applewood-smoked sausage.” Zappos’ head honcho Tony Hsieh’s Downtown Project is providing funding and Downtown Cocktail Room/Beat owners Michael and Jennifer Cornthwaite helped Young find a space and draft a business plan.
