ENCORE LAS VEGAS — Botero is partnering up with Surrender Nightclub, Tryst Nightclub and XS Nightclub to bring Botero Supper Club, pairing nightlife with dining. Beginning July 9, Botero Supper Club offers up a new menu from executive chef Mark LoRusso and specialty cocktails all set to the sounds of celebrity deejays after 9 p.m. New dishes include hamachi tartare with crispy rice cake and sweet chili vinaigrette, as well as a crudo tasting featuring tuna with an avocado-soy sauce and halibut with a ginger-lime sauce. Botero also ventures into sushi with rolls as well as turkey-mozzarella meatball sliders with parmesan cheese and basil, crispy rock shrimp po’ boys with a spicy aioli and a pork belly BLT and cheese. CAESARS PALACE — Central Michel Richard celebrates the Fourth of July a wee bit late with the Great American Cookout held outdoors on its patio on Saturday, July 7, from 4 to 9 p.m. That night, Caesars Palace will host its own fireworks display after 9 p.m. For $30, dine on whole roasted suckling pig, barbecue pulled-pork sandwiches, grilled bratwurst and all-beef hot dogs, grilled barbecue pork ribs and Cajun-grilled flatiron steak. Side dishes include steak fries, sauerkraut, mashed potatoes, macaroni and cheese, coleslaw and honey-baked beans.
