New Wine Cocktails at Payard; Oyster and Steak Specials

CAESARS PALACE — Payard Patisserie & Bistro now has a menu of wine cocktails created by manager Sam Berkley. Available only during dinner service, the list includes the $50 Grandiose, which features Paul Goerg champagne and Chateau Nairac Deuxieme Crus with the essential oils from a white truffle, garnished with a dehydrated lemon, caviar, an edible flower and gold flake. Other concoctions include the Poire Chaude with Ecco Domani moscato and pear cider along with a cayenne pepper and sea salt rim along with a pear slice and edible flower garnish. The Mojito Rouge uses muddled mint and lime to add a new dimension to a Louis M. Martini cabernet sauvignon, with agave nectar and soda, all garnished with a lime, mint sprig and a sugar cane. The Le Classecco uses Lamarca prosecco with drops of balsamic, garnished with a hibiscus flower and an orange twist. Each of the final three are available for $8 from 5 to 7 p.m. [EaterWire]
