This might be the time to declare 2012 the year of the gastropub. Public House opened earlier this year at the Venetian. Firkin just opened across from the Hard Rock Hotel. Gordon Ramsay is bringing his Gordon Ramsay Pub & Grill to the closing Bradley Ogden space at Caesars Palace later this year. Culinary Dropout debuts in two weeks and The Ainsworth opens by Labor Day weekend at the Hard Rock Hotel. Another Public House, no, not the same as the Venetian, is opening at the Luxor this fall.
Now comes word that Michael Mina’s Seablue at the MGM Grand, which closes Aug. 6, could become a pub as well.
MGM Grand president Scott Sibella talks about the renovations going on at the property and his experiences on Undercover Boss last year. “We’re working with Michael Mina on a new pub concept,” Sibella tells Vegas Inc.
Mina’s PR rep says he’s still in talks with the MGM Grand about the future restaurant he will create in the Seablue space.
