One of the few restaurants staying on schedule to open on time makes its debut next week. Culinary Dropout plans to start tantalizing diners starting Aug. 24. Huge progress has been made since Eater Vegas dropped in last month.

Practically the entire inside is ready to roll while outside, finishing touches are all that are needed for the opening. A sign outside the restaurant at the Hard Rock Hotel says it’s closed for staff training.

Eater Vegas got a look at the entire menu slated to start dishing at the opening. Antipastas, a raw bar with mussels and King crab legs and shared plates such as smoked salmon rillettes, house potato chips with onion dip, soft pretzels and provolone fondue and grilled artichokes make the menu. Seven sandwiches such as the warm Italian grinder with Genoa salami, tavern ham and provolone, the M.A.C. Burger and the shaved Prime rib dip show up along with a crispy shrimp Caesars salad and seared tuna salad.

On the entree side, sweet corn cannelloni, beef Stroganoff, Korean-style ribeye cap (very limited!), fried chicken, 36-hour pork ribs and MA?the meatloaf all taunt the taste buds.

Over on the drinks menu, a rotating list of eight seasonal craft beers show up along with 10 draft beers such as Blue Paddle Pilsner and Big Sky Moose Drool. Even a list of 17 canned beers make the menu. Another section of the drinks menu showcases fruity beers.

Now the rest of the speciality drinks haven’t been leaked yet, but stay tuned.
