A Fancy Pants Wine Dinner at the Charcoal Room

SANTA FE STATION — The Charcoal Room plans to hold a wine-pairing dinner on Thursday, Aug. 30. Chef Johannes Bernau created the menu to pair with wines from Robert Mondavi Winery. Dinner starts with a deviled quail egg with caviar, followed by a watermelon salad made with a Robert Mondavi pinot noir syrup and paired with the wine. Then comes a sautéed scallops dish with melted leeks paired with pinot noir. Next a seared foie gras with black garlic and onion quenelle paired with a cabernet sauvignon, followed by a grilled skirt steak with sautéed Enoki mushrooms and chimichurri polenta with a different cabernet sauvignon. The fifth course is a roasted lamb chops with shallot laminated dough and roasted carrots paired with merlot. For dessert, an ice cream sandwich.
