Ivo Angelov does a fantastic job as general manager of Le Cirque. He makes every diner feel like they are the best customer in the world. Every time I have dined at Le Cirque, I have had Jimmy as my server, which I think is due to Ivo's attention to detail. I always watch how the servers interact with other diners at Le Cirque, and they are both professional and friendly at the same time.
In addition, Jimmy is my favorite server in Las Vegas. It is at the point where he knows my likes and dislikes. Plus Jimmy is the consummate professional. I really look forward to seeing him.
Thierry E. at Twist is my second favorite server. Just a wonderful person who really understands the nuances of high-end dining in Las Vegas.
Matthias Maier, the restaurant director at Twist, runs a "tight ship." He strives for perfection, and often times it is achieved. He is my second favorite general manager/restaurant director.
Emmanuel Cornet is another amazing restaurant director but I just don't get to frequent Joel Robuchon as often as Twist or Le Cirque.
His name is Roger Martinez, and he is a server at The Country Club at Wynn Las Vegas. He's been working there for nearly three years, but has been in the industry in Vegas since he was 16. He used to work for Steve Wynn at the Golden Nugget, then followed him to Treasure Island, and, finally, to Wynn. He's an amazing, absolutely hilarious guy with a ton of interesting stories from his 20-plus years in the industry.
