Akira Back's New Japanese Restaurant Name Game

The former China Grill space at Mandalay Bay has unveiled new plywood that confirms for the first time the Japanese focus of Akira Back's next restaurant. And The Light Group-run space is hyping a culinary revolution.

The plywood touts a March opening date for "the next revolution in Japanese dining" that will be "upscale" and "promises to be a hot new dining destination." It also cryptically announces "the rumors are true." Eater Vegas has previously reported the widely held belief among Mandalay Bay staff this venture would convert to a Japanese menu.

While the advertising does not mention Akira Back by name, the Yellowtail chef has been assigned to the space since August. In the past few months, two possible names have been trademarked by a partner of the The Light Group, HHH Holdings, that could be instantly assigned to this restaurant. The simple and obvious candidate, Akira and the more literal Maki The Art of Sushi. The latter trademark has also been registered to include the possibility of a sake bar.

The Light Group took over the lease of China Grill and the adjoining Red, White and Blue in August. Red, White & Blue has since been renovated and will open as Citizens Kitchen & Bar on Jan. 29. under the stewardship of chef Brian Massie.
