The Japanese cuisine invasion continues with the soon-to-open Yonaka Modern Japanese in Spring Valley. Sure, the restaurant will features sushi, sashimi and makimano. Look for toro, sake toro, shime sabe and hamachi on the sushi/sashimi side as well as rolls such as the yoshoku with Wagya tataki, a midnight rolls with freshwater eel, salmon and grilled asparagus and an okura roll with crispy okra and yellowtail.

Fried dishes include baby tako, anago and kabocha, a Japanese pumpkin. Cool plates include the crudo of seabass, sake orenji with Atlantic salmon and Nippon Nicoise with bigeye tuna and fingerling potatoes.

Think of this place as a casual approach to Japanese fine dining in a modern setting.
