What's the Latest Update on Mingo Kitchen & Lounge?

Mingo Collaso has spent the last six months battling the city trying to get his coming Mingo Kitchen & Lounge open in Art Square in Downtown Las Vegas. The owner of Mundo at the World Market Center originally planned to soft open the new spot in July with a grand opening over Labor Day weekend.

Since then, Collaso has met with delays. In September, he had issues with Southwest Gas getting gas lines to the restaurant. In December, the city wanted to make the restrooms larger. The latest hurdle? The city won't allow brick walls, so he is framing the walls for drywall now. "Totally sucks but the city had us change sooo many things," Collaso says in an email to Eater Vegas.

When complete, the lounge will feature an intimate bar with seating for 60, outdoor space and chef Robert Solano's dishes such as chipotle mac and cheese, veggie sliders and other modern American comfort foods and small plates.

Look for a March opening if all construction stays on track.
