Spanish restaurant king José Andrés already has China Poblano at the Cosmopolitan. Now comes word that he's opening China Chilcano, a Peruvian and Chinese mashup, in Washington, D.C.
Expect to find ceviche, fried rice and dumplings alongside Peruvian causas (a style of potato salad) on the menu.
Eater DC reports, "The name is a reference to the chilcano, one of Peru's traditional cocktails." Expect a spring opening. Head over there for more details on the restaurant.
