Border Grill executive chef Mike Minor just announced he was leaving the restaurant at Mandalay Bay at the end of the year to open a food truck called Truck U Barbecue. The truck plans to serve up a fusion of American barbecue and Latin foods such as slow-smoked ribs with a molasses-based sauce, a pulled pork quesadilla with jalapeño-molasses barbecue sauce and a burrito stuffed with Tecate-beer battered fried fish. Luca Paganico from HGTV's Design Star plans to design the truck. [LVW]
