A triple threat expansion announcement from Block 16 Hospitality reveals yet another new tenant for The Linq retail, food and entertainment complex. The company behind Holsteins Shakes and Buns and Public House will run a 1,000-square-foot hot dog venue, Haute Doggery, in an extremely advantageous spot right across from the ticket sales booth for the forthcoming High Roller observation wheel.
While the High Roller attraction won't be ready until next year, the fancy fast food stand hopes to be operational by the end of December. The high-end dogs will include versions of Holstein's burgers such as The Gold Standard featuring "smoked bacon, aged goat cheddar cheese, tomato confit, baby arugula and garlic-chive aioli." Haute Doggery will also serve fries and onion rings. Holsteins already offers their twist on the classic Chicago hot dog at Cosmopolitan of Las Vegas.
Later in March 2014, Block 16 will open Flour & Barley – Brick Oven Pizza serving individual brick oven-style pizzas with a full cocktail and beer program. Designed as a rustic sports bar in The Linq's urban setting, the 3,800-square-foot pizzeria is being designed with "a natural wood and brick interior, a marble bar top and marble tabletops, complemented by vintage posters and classic black and white sports photography." Like many of it's future neighbors, it will add a 1,200-square-foot patio opening to The Linq's main thoroughfare.
And in an unusual strategy, at the Panorama Towers Strip-facing condo building, The Blind Pig – Provisions & Lounge will offer residents and visitors an off-Strip taste of the company's menus. The 3,515-square-foot project has a publicly declared construction budget of $500,000. Open from breakfast until late dinner, the focus ranges from grab and go, seasonally adjusted lunch menus to late-night bites to share with a crafted cocktail menu.
Overseeing all projects is executive chef Anthony Meidenbauer, Block 16's director of culinary operations.
