Rose.Rabbit.Lie. Now Has Entertainment, a Chef

Rose.Rabbit.Lie., the mashup social club, nightclub and restaurant coming to the Cosmopolitan of Las Vegas in December, adds a new layer with Spiegelworld gussying up the entertainment. The producers behind Absinthe at Caesars Palace are bringing Vegas Nocturne with new acts. From the sounds of it, the show will be interactive and break the fourth wall, ongoing while guests dine and cocktail.

The show unfolds in three parts at 8 p.m., 10 p.m. and late night. Guests can buy tickets for each experience for $125 for the earlier hours and $30 late at night. Cocktails and dinner service start at 6 p.m. nightly. The club plans to debut Dec. 30 across from Wicked Spoon.

Also new, Wesley Holton will head up the culinary experience from Coastal Luxury Management, the Monterrey, Calif., company that produces Pebble Beach Food & Wine and Los Angeles Food & Wine, as well as Restaurant 1833, Cannery Row Brewing Co. and Harvest Farm-To-Table. If Rose.Rabbit.Lie. is anything like Restaurant 1833, a James Beard Foundation semifinalist for Best New Restaurant in 2012, expect an ambitious cocktail program paired with interesting takes on dishes.

Holton comes from The Water Club and Seablue at the Borgata in Atlantic City, and previously worked as the executive chef at Daniel Boulud Brasserie at Wynn Las Vegas for three years.

Back in July, Eater Vegas dished out news of the Chelsea Social Club, a $12.8 million, 23,354-square-foot social club with room for 1,143 at the Cosmopolitan of Las Vegas opening in December.
