LA Market head chef and Hell's Kitchen season eight winner Nona Sivley is joining her culinary mentor Kerry Simon in Las Vegas. And she may have revealed the name of Simon's first downtown restaurant.
Sivley announced via her Facebook page she will oversee Pork & Beans at East Fremont's still under construction Container Park. Michael Cornthwaite and his Future Restaurant Group have created the concept with a menu curated by Kerry Simon, including artisan sausage, beer and the necessary beans.
Sivley has been working at Simon's Los Angeles restaurant inside the JW Marriott Hotel since winning Gordon Ramsay's TV contest in 2010. After crowning her the winner, the shouty chef praised Sivley's talents, noting "she has a phenomenal palate and a real passion for cooking." Pork & Beans will open by mid-November.
After opening Pork & Beans, Sivley writes she will move over to Simon's second major downtown project at the former John E. Carson Hotel. As exclusively revealed by Eater Vegas, Simon will occupy Suite 100 of the U-shaped property, creating a tavern with a 1,410-square-foot bar downstairs and a 1,070 square-feet lounge on the second-level roof. The interior courtyard of the old hotel and 240-square-foot of seating on the Carson Avenue will be open to guests.
Sivley names the project "Carson's Table" in a recent Facebook note. She also estimates a December debut for the heavily under construction venue, that will also include Bocho, a sushi restaurant from Le Thai's Dan Coughlin.
