Mercadito Hospitality has once again re-affirmed its plans to move into the Red Rock Resort. The company promises their Mercadito Mexican restaurant will feature "great food, great ambiance, great design, great drinks, high energy" matching the style of their five other locations in Chicago, Miami and New York.
In conversation with Crain's Chicago Business, managing partner Alfredo Sandoval revealed September 2014 was the most likely opening date. The first Mercadito restaurant debuted in 2004 in New York, before the expanding company became a Chicago-based venture with seven separate outlets in the city. They are now heading far west for the first time, taking a food truck to San Diego to help test the market and are still looking for further nationwide expansion via shopping malls.
Red Rock Resort has been without a Mexican-style restaurant since Cabo Mexican Restaurant shuttered in August 2012. Lucille's Smokehouse Bar-B-Que has taken its place, leaving speculation as to which of the resort's restaurants will have to vanish over the next nine months to make way for Mercadito.
