COSMOPOLITAN OF LAS VEGAS — Coastal Luxury Management — which already runs Restaurant 1833 and Cannery Row Brewing Co. in Monterey, Calif., as well as Pebble Beach Food & Wine and Los Angeles Food & Wine — is heading up the food and beverage program for Rose.Rabbit.Lie and just announced some of the people behind the venture., and in addition to tapping executive chef Wesley Holton, who worked at Daniel Boulud Brasserie, they have brought on executive pastry chef Ben Spungin, formerly of Bernardus Lodge in Carmel Valley, Calif., master sommelier Darius Allyn from the Montage in Beverly Hills and chief mixologist Marshall Altier of JBird and Tailor in New York City to join the team.
