Hecho en Vegas, MGM Grand's replacement for the shuttered Diego, has pulled down the plywood ahead of its official Dec. 28 debut and revealed a vibrant, smart, wide open concept that is already drawing tourist interest.
Arizona restaurateurs the Flores family, who own El Charro Cafés and Sir Veza's Taco Garage are behind the new menu at the 10,084-square-foot space. With an already existing kitchen, the publicly declared budget of $690,788 was allowed to create an airy environment that pushes out into The District section of the resort, also home to Michael Mina's Pub 1842 and Emeril's New Orleans Fish House.

A long, rectangular entryway rug points focus to a large mural in the middle of the room. On the neighboring wall, a geometric art creation reaches to the ceiling.

The Mexican grill and cantina seats 350 and will be open Sunday to Thursday from 5:30 to 11 p.m. and offers extended hours on Friday and Saturday from 3 to 11 p.m. A Fiesta Hour from 4 to 6 p.m. will be available Monday to Friday.
