SBE isn't done with its culinary lineup coming to the new SLS Vegas resort that opens late next year. Now comes word the Hollywood's Cleo joins the mix.
The 4,000-square-foot restaurant will feature multiple exhibition kitchens as well as a wood-burning stove to showcase chef Danny Elmaleh's Mediterranean cuisine. Aside from homemade laffa breads, moussakah and meatball tangine from the Hollywood outpost at the Redbury, Elmahleh is conjuring up new dishes that are Vegas specific as well.
Also on tap, the mixology program that includes fresh-pressed juices.
Expect to find a similar look and feel to the Hollywood version as well. There photographer and filmmaker Matthew Rolston created a vibe that in part reflects a rock and roll feel with lots of sex thrown in for good measure. Also, Cleo plans to feature a special area for ceremonial plate breaking, a tradition at the Hollywood outpost.
SLS officially lists 10 restaurants coming to the resort. Already The Bazaar by José Andrés, Katsuya, Umami Burger, 800 Degrees, Griddle Cafe, Mercato di Vetro and hot dog stand Papaya King have been announced. The Sayers Club and Foxtail nightlife experiences are also part of the mix.
UPDATE: Papaya King and Mercato di Vetro are not going to be a part of SLS Las Vegas.
