Vic "Vegas" Moea, who made a name for himself on Food Network Star, debuts his own restaurant on Saturday. Vic's takes over the former Trumpets space in the Sun City Anthem Center in Henderson with 180 seats and wall-to-wall, floor to ceiling windows featuring unobstructed views of Las Vegas below.
In a press release, Moea explains why he would locate in a retirement community. "No one would expect me to open my restaurant up here, that's why I did it — it's the unexpected that makes life more interesting. To me, the experience at Vic's will be like being seated in the rear of a Bentley while cranking up 'Welcome to the Jungle' with someone like The Rock as your chauffeur. It's like a strange dream that is hard to explain but one that you love remembering."
Moea incorporates his personality and that philosophy in the menu as well. Some of the "tappatizers" include knish sliders made with grilled pastrami, melted Swiss cheese, potato stuffed roll and stone ground mustard and meatloaf spring rolls, prepared with his grandmother's meatloaf recipe, wrapped in a won ton, deep fried and served with pan gravy and ketchup aioli.
On the entree side of the menu, look for a caramel apple pork chop that uses his grandmother's stuffing recipes topped with a roasted caramel apple and a butter whiskey broth. An orange roughy is sautéed and served over garlic mashed potatoes topped with shrimp scampi while the spaghetti and meatball come with a marinara that takes six hours to simmer.
Some of the signature desserts include a Nutter Butter made with orange soda-battered deep fried Nutter Butters served with a Chambord Welch's grape juice reduction, crème brulee bread pudding and carrot cake cheesecake martini.

The restaurant plans to be open for lunch from 11 a.m. to 4 p.m. and dinner from 4 to 10 p.m. Sundays through Thursdays and 4 to 11 p.m. Fridays and Saturdays. For reservations, call 702-522-7200.
