Looks like Shawn McClain is hoping his coming FIVE50 Pizza Bar will be open by May. The chef behind Sage at Aria plans to open his second Vegas concept at the resort in the former Skybox Sports Bar & Grill.
The Michigan-based chef who has Green Zebra in Chicago tells Las Vegas Weekly that he will move to Vegas for nine months to bring FIVE50's East Coast-style pizza to perfection. The dough will be fermented for 48 hours to add to its flavor. He also plans to have 12 taps at the restaurant, focusing on North American craft beers and a rotating selection of local brews.
The name FIVE50 comes from the temperature at which McClain cooks the pizzas as well as the time when a special happy hour will go off daily.
David Rockwell and his Rockwell Group are creating the look of the restaurant, which includes wood-fired ovens, a central bar, communal tables and a walk-up slice counter for guests on the go.
