Not only is Kerry Simon creating the menu for the new Sapphire Day Club & Pool opening here in May, but now comes word that the rock and roll chef is opening Simon Mansion & Supper Club in the Hard Rock Hotel's all-inclusive Punta Cana resort in the Dominican Republic.
Simon spent extensive time in the Caribbean to come up with the menu with help from corporate chef David Cruz. Look for sushi, dry-aged meats and local seafood on the menu here. Some of the dishes include a Caribbean lobster roll with grilled lobster, celery, capers, lemon, and aioli; roasted organic carrot and avocado salad with citrus dressing; curried crab and watermelon salad with arugula; and a rack of lamb served with roasted vegetable quinoa, chickpea puree and cucumber yogurt.
Interior design firm 555 International, headed by James Geier, created the look of the restaurant, an ode to rock and roll with multiple rooms. Inside, three private dining rooms along with rooms representing a dining room, living room, bedroom, bathroom, library, studio and patio. Some of the design details include a broken glass chandelier, oversized throne chairs, reflective art work and central sushi bar.
The restaurant opens in May. Simon has his eponymous restaurant at Palms Place and KGB: Kerry's Gourmet Burgers at Harrah's Las Vegas here in Vegas.
