Certified Open tracks some of the smaller restaurants that open in Las Vegas. See a new restaurant that deserves some love? Email vegas@eater.com.
LVH has entered the feisty Las Vegas burger scene with a stealth candidate. With barely a ripple of pre-publicity, Burger Bistro has debuted down the corridor from Benihana and across from TJ's Steakhouse. Signage prints the name as burgerbistro, following a recent Vegas trend for favoring lowercase fonts.
The burger menu sits in the $10 to $15 price range and offers six varied choices including Angus beef, Australian lamb, yellowtail tuna, turkey, lump crab cake and a vegetarian option. A brioche or wheat bun is available for each patty.
The toppings aim to be equally diverse and include their bistro sauce as a standard selection, or for $5 extra, add gourmet toppings such as "foie gras terrine with sweet apples," "Barolo braised short ribs" or "baked brie with double smoked bacon."
Fries can be ordered skinny or thick, and upgraded to truffle or garlic parmesan. Salads fill out the menu and add familiar appetizers such as fried pickles, fajita nachos and jalapeno poppers.
The bistro concept features a broad wine and beer selection, including 30 craft beers. An opening promotion for the concept will include one of those beers free with any burger ordered.
