The drumbeat heralding chef Daniel Boulud's return to Vegas bangs a little louder. The former Wynn Las Vegas tenant closed his Daniel Boulud Brasserie in 2010, but recent persistent and informed rumors suggest he will take over the departing Valentino space. Piero Selvaggio will shutter the popular Venetian restaurant in June.
Adding more intrigue to the rumor mill is a February Craigslist posting from The Dinex Group, Boulud's company, inviting chefs, sous chefs, pastry chefs, sommeliers and managers to apply for prospective jobs within the Boulud empire. For a worldwide vacancy and with a world of options, Boulud has chosen the Venetian on Wednesday, March 13, from 9 a.m. to 6 p.m. to interview the candidates.
The ad cagily notes expansion opportunities in "New York, Palm Beach, Miami ..." adding deliberate ellipses. The recruiting day is announced by "The Dinex Group (Las Vegas)." During his Las Vegas residency the Michelin 3-star chef had created a now defunct Dinex LV Management LLC.
