Meet the Mini Pepito De Ibérico, the $7 Iberico hamburger sliders at Jaleo at the Cosmopolitan of Las Vegas. These Spanish burgers are made from the legendary acorn-fed, black-footed ibérico pigs of Spain, which gives a mouthwatering flavor unparalleled with any other. These sliders are a 80/20 blend of Iberico hanger steak and fatback served on a brioche bun with aioli, confit piquillo peppers, caramelized onions and piparra pepper. Of course, there is also the option of having it with Iberico bacon.
They pair well with Oloroso Tradición V.O.R.S., Bodegas Tradición, Jerez-Sherry for $150 per bottle. Lucas Paya, Think Food Group's wine director, says, "I can't think of any better wine to go with our Iberico hamburger. The complex nutty character and toasted elements in the wine pair perfectly with the acorn-fed, wood-fire grilled meat. Sweet, oily notes in the wine and caramelized onion and confit piquillo peppers in the bun are also a great match. The wine gets your palate ready for the next bite in an endless synergy."
