The Krug is back at Restaurant Guy Savoy. Now guests can dine at the Krug Chef's Table, the six-seat restaurant in Guy Savoy's only restaurant in the United States at Caesars Palace. Here guests get a view of the kitchen and a tasting menu of up to 13 courses that pairs with Krug's prestige cuveé Champagnes.
Some of the dishes that could appear (remember, this menu changes with the seasons) include a concassé of oysters with seaweed and lemon granité; gingerling potato rocks with caviar and smoked sabayon; sesame seed and tarragon-crusted Japanese Wagyu; as well as Guy Savoy classics, including his signature artichoke and black truffle soup. While no prices were listed with the Krug tasting, the 13-course Innovation-Inspiration menu goes for $348 per person without the Champagne pairing.
The courses here start with Krug Grande Cuveé and end with Krug Rosé. A press release points out that "Restaurant Guy Savoy wine list features one of the most extensive offerings of Krug Champagnes in the country."
Also new, an iPad application that brings Olivier Krug, sixth generation Maison director of Krug, and chef Guy Savoy to the table. Here guests get a live video feed of the menu being created with views of four stations in the kitchen and the option of adjusting the camera angle.
This is the only Krug Chef's Table in the United States, replacing the larger version in the restaurant, and one of less than 10 dedicated Krug spaces in world. The room is decorated with a sculpted chandelier made from a series of Krug bottles. The table is set with custom Bernardaud china embellished with the Krug crest and Krug's signature Le Joseph glasses designed by Riedel and shaped to amplify the bubbles.
