The $45 per person pre-fixe dinner menu, available Memorial Day through Labor Day, includes a trio of appetizers that include Kobe meatballs, albacore sashimi with garlic aioli and shrimp dim sum with dashi broth; chicken salad Chinois; tuna, yellowtail, salmon, albacore and whitefish sushi with an albacore and avocado roll; grilled petite filet with shitake mushroom tempura and truffle mayo; raspberry bread pudding with carmel gelato; and fresh fruit and sorbet. The restaurant partnered with Chamucos Tequila to serve four specialty courses paired with a complementary tequila spirit. Cocktail service starts at 6:30 p.m. and dinner service kicks off at 7 p.m. Courses include a crab-corn quesadilla topped with habañero mango ginger salsa; Guadalajara tomatillo guajillo soup; grilled halibut on banana leaf with roasted red bell pepper almond sauce, cilantro lime rice and sautéed green beans or grilled black peppercorn filet, potatoes confit and sautéed green beans; and homemade coconut ice cream served on a bed of toasted coconut, topped with fresh mango and raspberry sauce.
