The ramen wars continue with a newcomer threatening to take on Chinatown. Los Angeles import Jinya Ramen is opening a location at 4860 W. Flamingo Road.
Jinya serves up Tonkotsu ramen with a pork broth that the restaurant says is "pumped up with industrial quantities of dashi and dried fish, a broth that seemed to be trying to establish the record for the most umami per milligram."
Former Los Angeles Weekly food critic Jonathan Gold called this one of the 99 Essential Restaurants in 2010 and one of the best 10 dishes on 2010.
In recent months, Monta Ramen opened a second location, Monta Chaya, in Henderson while Koraku Ramen, Shoku Ramen-ya from the owners of Bachi Burger and Fukumimi Ramen made their debut
