Dustin Lewandowski on Wolfgang Puck and Sip & Savor

Wolfgang Puck and his culinary team continue their celebration of 20 years in Vegas with Sip & Savor, a one-night food event at Spago at the Forum Shops at Caesars that brings together food and drinks from all of Puck's Vegas restaurants. The May 29 event starts at 6 p.m., with tickets running $120 in advance and $130 at the door at 702-369-6300. Eater Vegas talked to the chefs in the Puck empire to get an exclusive look at the dishes they plan to serve and how the famous Austrian chef has effected their careers. Earlier, Eric Klein, the executive chef at Spago shared his secrets with Eater Vegas as did Matt Hurley from CUT. Now, Dustin Lewandowski at Wolfgang Puck Pizzeria & Cucina.

How long have you worked for Wolfgang Puck?
I started with Wolfgang Puck in 1999 as a line cook at Postrio. I have been at the Wolfgang Puck Pizzeria and Cucina since opening in 2010.
 
What have you learned from him?
I've learned his approach to Italian food is to focus on seasonality, the quality of ingredients and keeping things simple, which in turn makes our guests feel comfortable and welcome like they are at home. I've come to find that restraint and simplicity can be as challenging as developing a intricate plate.

I have also learned the ability to adapt with the times and welcome change as the culinary world evolves.
 
What will you be serving at Sip & Savor?
We will be serving our signature wood fired pizzas including our Classic Margherita Pizza, Italian Sausage Pizza with Scamorza and Cherry Peppers, Spicy Pepperoni with Calabrian Peppers, Wild Mushroom Pizza with Fontina and Arugula, and Yukon Potato Pizza with Caramelized Onions Guanciale and Goat Cheese.

We will also serve our Braised Wild Boar Ragu with Garganelle Pasta and Pecorino Toscano.

We will also serve our Mesquite Grilled Meatballs with Tomato-Olive Ragu.
